Ingredients : 1.5 kg

4 cloves garlic
3 teaspoons red chillis, seeeded and
chopped
2 teaspoons
peppercorns, crushed
2 teaspoons
soft brown sugar
2 tablespoons
soy sauce
2 teaspoons
turmeric, ground
1 tablespoon
lime juice
30 g
butter, chopped
Method :
Use a large cleaver to cut the chicken
into half. Preheat the oven to moderate 180oC. To prevent the
chicken wings from being burnt during baking, tuck them underneath.
Place the chicke, skin side up on a rack in a baking dish. Bake for 30
minutes. While baking, combine the chili, peppercorns, garlic and sugar
in a food process and process until smooth. Add the soy sauce, turmeric
and lime juice, and process in short bursts until well combined. Brush
the chicken with the blended spice mixture and dot it with the butter
pieces. Bake in the oven for another 30 minute or until cooked. Serve
warm.
