Ingredients :
1 young duck, cut into 8 pieces
2 stalks lemon grass, bruise (white
part only)
4 tablespoons cooking oil
5 kaffir lime leaves
750 cc water
3 pieces dried sour fruit
Spices (ground)
200 g green chilies
10 shallots
2 teaspoons fresh ginger, chopped
2 teaspoons turmeric, chopped
2 tablespoons galangal, chopped
1 1/2 teaspoons peppercorns
8 candlenuts, roasted
Salt to taste
Method :
Heat a wok with oil and saute the ground
spices, lemon grass and kaffir lime leaves until fragrant. Add in the
duck. Add enough water to just enough to cover the duck. Add the dried
sour fruit. Simmer for 2-3 hours until the duck is tender, the spices
are absorbed and the gravy has thickened. Season to taste and serve hot
with steamed white rice.
