Crab Curry Recipe

Crab Curry Recipe

Ingredients :

5 medium size live crabs

3 tablespoons cooking oil

1 stalk lemon grass, bruised (white part only)

1 salam leaf

2 kaffir lime leaves

1 liter coconut milk

Salt to taste


Spices (ground)

4 red chilies

1 teaspoon fresh ginger, chopped

1 teaspoon turmeric, chopped

2 teaspoons galangal, chopped

1 teaspoon cilantro, roasted

3 candlenuts, roasted

1/6 teaspoon cumin, roasted

1/4 teaspoon shrimp paste

2 cloves garlic

5 shallots

1 teaspoon tamarind juice


Method :

Clean the crabs and discard the shell and gills. Use a cleaver and cut the crabs into half. Heat a wok with oil and saute the ground spices, salam leaf, kaffir lime leaves and lemon grass until fragrant. Add coconut milk and salt to taste. Bring to the boil. Add in the crabs and simmer until cooked. Serve hot.
