Ingredients :
800 g chicken, cut into 6 pieces
3 tablespoons cooking oil
1 stalk lemon grass, bruised (white
part only)
4 slices turmeric
1.5 liters water
6 cabbage leaves, cut into 5 x 5 cm
pieces
Spices (ground)
2 red hilies
1 teaspoon cilantro, roasted
1/4 teaspoon cumin, roasted
3 candlenuts, roasted
1/4 teaspoon dried shrimp paste
6 shallots
3 cloves garlic
2 teaspoons tamarind
Salt to taste
Sugar to taste
Method :
Heat a wok withoil and saute the ground
spices, turmeric and lemong rass until fragrant. Boil the chicken in a
pot with 1.5 liters of water until tender. Add the sauteed spices into
the pot and continue to cook over low heat for 15 minutes. Add the
cabbage and boil for a further 5 minutes before serving it hot.
