| Ingredients : 
            500 g chicken breast, remove bone and 
			skin 
            2 whole Chinese dried peppers 
            1 teaspoon fresh ginger, minced 
            1/2 red pepper (capsicum) cut into 
			cube 
            1/2 green pepper (capsicum) cut into 
			cube 
            1/2 cup roasted peanuts 
            5 scallions, chopped 
              
            Seasoning 
            1 tablespoon Chinese rice wine 
            1 tablespoon sugar 
            2 tablespoons soy sauce 
            1 teaspoon cornstarch 
            1.5 teaspoon sesame oil 
            1/2 teaspoon white vinegar 
            Salt to taste 
              
            Marinate 
            1 1/2 tablespoons cornstarch 
            1 tablespoon water 
            1 tablespoon soy sauce 
             Method : 
		Cut the chicken into bite-sized cubes. 
		Then mix the chicken pieces with water, soy sauce and cornstarch. Set 
		aside to marinate for about half an hour. Mix the seasoning sauce 
		together and set aside. Heat a wok with some oil and stir fry the 
		chicken until cooked and set aside. Heat a little oil in a
              wok, stir fry the red pepper until they turn slightly black. Add the fresh ginger and
              stir fry for about 10 seconds, stirring constantly. Add the seasoning sauce,
              stirring until thick. Add the cooked chicken,
              stir until thoroughly heated. Add scallions, green and
              red peppers and cook for 1 minute. Turn off the heat, add peanuts, 
		mix well and serve over white rice immediately while still hot.
