Ingredients :
750 g sea bass
2 tablespoons flour
Oil for deep-frying
Salt for rubbing fish
Sauce
2 tablespoons sugar
2 tablespoons vinegar
1 tablespoon soy sauce
1/2 tablespoon cornstarch
2 tablespoons stock
Garnish
3 scallions
3 slices ginger root, peeled
1 red pepper (capsicum)
Chinese parsley (fresh cilantro)
Method :
After cleaning and scaling the fish, make
diagonal slashes at intervals on the fish. Rub the inside and out with
salt before coating with flour. Thinly shred the onions,
ginger root and red pepper. Deep-fry the fish in hot
oil until golden. Then place it on a long
dish. Pour off the excess oil
from the wok. Put in the sauce mixture
and stir until smooth, then pour it over the fish. Garnish with shredded
onions, ginger root, red pepper and Chinese parsley. Serve hot
with steamed white rice.
