25 medium oysters
2 teaspoons fresh root ginger, chopped
2 tablespoons scallions, chopped
Vegetable oil for deep-frying
Salt to taste
Pepper to taste
5 tablespoons plain flour
1 tablespoon cornstarch
5 tablespoons water
1/2 teaspoon baking powder
Wash the oysters, then shell and drain.
Sprinkle the oysters with salt, pepper and ginger. Combine the ingredients
for the batter until smooth. Heat up a wok with the oil. When very hot, dip the
oysters individually into the batter. Fry in bathes for 3
minutes until golden brown. Drain. Transfer to a heated
serving dish and sprinkle with onion. Serve hot.
