Ingredients :
600 g minced beef
100 g pork fat
8 tablespoons stock
1 tablespoon cornstarch
1 teaspoon sesame seed oil
2 1/2 teaspoons salt
12 small black mushrooms
1 tablespoon peanut oil
1 teaspoon sugar
Method :
Cut the pork fat into small cubes. Heat up
a small pot of boiling water and blanch the pork fat for 1 minutes. Then
rinse under the tap. Use a mixing bowl to mix the pork fat, stock,
minced beef, cornstarch, sesame seed oil and 1.5 teaspoon salt. Stir
with a fork until the mixture becomes sticky. Fill a bowl with hot water
and soak the black mushrooms for 30 minutes. Discard the tough stems and
place the caps in a bowl. Add 1 teaspoon salt, the
sugar and peanut oil and mix well. Steam the mushrooms over a
medium heat for 5 minutes and set aside. Divide the beef into 12
portions, molding each portion into an egg shape and place 1
mushroom on top of each 'egg'. Use 6 small dishes and
place 2 of the beef and mushroom 'eggs' in each dish. Steam over a high heat for
5 minutes and serve hot.
