Ingredients :
1.5 kg pork, debone and cut into 3 cm
cubes
2 cups
onion, chopped roughly
15 cloves
garlic, crushed
4 tablespoons
fresh ginger, chopped finely
4 tablespoons peanut oil
1 tablespoon sesame oil
2 teaspoons chili powder
1 teaspoon turmeric, ground
1 tablespoon vinegar
1 cup water
2 tablespoons fresh cilantro leaves
Method :
Use a food
processor to process the onion, ginger, garlic until it formed a rough
paste. Heat a wok with the peanut oil and sesame oil. Stir in the paste
and cook over medium heat until it turns golden brown. It should take
about 12-15 minutes. Add the turmeric, chili powder and the pork. Stir
well until the pork is well coated in the mixture. Add the water and
vinegar. Cover with lid and simmer for 1.5 hours or until the pork is
tender. If necessary, remove the lid to allow more liquid to evaporate.
Season with salt to taste and sprinkle some cilantro leaves over the
top. Serve with boiled white rice.
