Coconut Shrimp Curry Recipe

Coconut Prawn Curry Recipe

Ingredients :

750 g raw shrimps, shell removed with tails intact

1 teaspoon turmeric, ground

1 cup onion, roughly chopped

4 cloves garlic, crushed

1/2 teaspoon paprika

2 teaspoon red chili, seeded and finely chopped

1/2 teaspoon ground cardamom

Pinch ground cloves

1 teaspoon fresh ginger, finely chopped

3 tablespoons cooking oil

2 tomatoes, diced

1 cup coconut cream

2 tablespoons fresh cilantro leaves

Method :

Toss the shirmps with the turmeric. Use a food processor to process the onion and garlic until it formed a paste. Heat up a wok with oil. Add the spicy paste, and stir it into the oil. Cook for about 10 minutes over a low heat. Add a little water if necessary. Do not let it burnt. When the paste is cooked, add in the shrimps, tomatoes and coconut cream. Simmer for about 5 minutes or until the shrimps are cooked. It should looked slightly red.

Stir in the cilantro leaves, season with salt according to taste and best serve hot with steamed white rice.
