(Blend until smooth)

Shallots
Garlic
Candlenuts
Dried shrimp paste (belacan)
Red chilies
Sugar
Make a few deep cuts on the fish body.
Rub salt all over it.
Stuff sambal ingredients into the cuts.
Place the fish on a grill rack and pour in 2 tablespoons of oil on the surface.
Put the fish in a oven and bake at 250oC for 15 minutes.
Serve.
