      300 ml/0.5 pt/1.25 cups milk 
      60 ml/4 tbsp rum 
      A pinch of salt 
      30 ml/2 tbsp caster (superfine) sugar, plus extra for sprinkling 
      225 g/8 oz/2 cups plain (all-purpose) flour 
      5 ml/1 tsp baking powder 
      30 ml/2 tbsp oil 
      200 g/7 oz/1 small can of pineapple pieces, drained 
      200 g/7 oz/1 small can of peach slices, drained 
      Corn oil, for deep-frying 
      A pinch of ground cinnamon

      Method : 
      
      Beat the milk with the rum, salt, sugar, flour, baking powder and oil to 
      make a batter. Pat the fruit dry on kitchen paper (paper towels), then dip 
      it into the batter and fry (saute) in deep hot oil for 3 minutes until 
      golden brown on all sides. Mix a spoonful of sugar with the cinnamon and 
      sprinkle over the fruit, then serve immediately.  |
