Cider Syllabub Recipe

Ingredients : Serves 4

90 ml/6 tbsp dry cider
Grated rind and juice of 1 lemon
75 g/3 oz caster (superfine) sugar

300 ml/0.5 pt double (heavy) cream, whipped
8 shortbread fingers

Method :

Mix together the cider, lemon rind and juice, and sugar, and leave to stand for at least 2 hours. Stir in the whipped cream and whisk until the mixture stands in soft peaks. Spoon into individual glasses and chill well before serving with the shortbread fingers.
