Baked Rice Pudding Recipe

Ingredients : Serves 4

50 g/2 oz/0.25 cup short-grain rice
600 ml/1 pt/2.5 cups milk
25 g/1 oz/2 tbsp caster (superfine) sugar

Grated rind of 0.5 lemon
Grated nutmeg, for sprinkling
15 g/0.5 oz/1 tbsp butter or margarine

Method :

Put the rice in a greased 900 ml/1.5 pt ovenproof dish and stir in the milk. Leave to soak for 30 minutes. Stir in the sugar and lemon rind, sprinkle with nutmeg and dot with the butter or margarine. Bake in a preheated oven at 150°C/300°F/gas mark 2 for 30 minutes, stir, then bake for a further 2 hours until creamy.
