Veal Burgers Recipe

Ingredients : Serves 4

1 garlic clove
150 ml/0.25 pt canned ratatouille

Salt and freshly ground black pepper

2.5 ml/0.5 tsp chopped basil or thyme

50 g/2 oz/0.5 cup cooked white rice
450 g/1 lb minced (ground) veal

50 g/2 oz/0.5 cup cooked ham, finely chopped
30 ml/2 tbsp chopped parsley
1 egg, beaten
Plain (all-purpose) flour
25 g/1 oz/2 tbsp butter or margarine

15 ml/1 tbsp oil

Method :

Squeeze the garlic over the ratatouille in a saucepan, season with salt and pepper and add the basil or thyme. Bring to the boil and simmer for 5 minutes or until any free liquid with the ratatouille has almost evaporated. Mix together the rice and both meats and stir into the ratatouille with the parsley. Season to taste with salt and pepper. Mix in enough egg to bind the ingredients. With floured hands, shape into eight burgers and chill until needed. Just before cooking, sprinkle the burgers with flour and brush with the butter or margarine and oil. Grill (broil) under a medium grill (broiler) for 20 minutes until cooked through, turning once and basting occasionally with butter and oil.
