Mozzarella Veal with Anchovies Recipe

Ingredients : Serves 4

4 veal escallops, flattened
Salt and freshly ground black pepper
25 g/1 oz/0.25 cup plain (all-purpose) flour

15 g/0.5 oz/1 tbsp butter or margarine

15 ml/1 tbsp oil
25 g/1 oz/0.5 small can of anchovies, mashed
3 tomatoes, skinned and sliced

10 ml/2 tsp dried oregano
100 g/4 oz Mozzarella cheese, sliced
4 black olives, stoned (pitted)
15 ml/1 tbsp chopped basil

Method :

Season the veal with salt and pepper and toss in the flour. Melt the butter or margarine with the oil and fry (saute) the veal until golden brown on both sides. Spread the veal thinly with the anchovies, cover with tomato slices, sprinkle with the oregano and top with the cheese. Place an olive on top of each and heat under a hot grill (broiler) until the cheese softens. Sprinkle with the basil and serve immediately.
