Chili Con Carne Recipe

Ingredients : Serves 4

30 ml/2 tbsp oil
2 onions, chopped
1 garlic clove, crushed
550 g/1.25 lb minced (ground) beef

5 ml/1 tsp cayenne
5 ml/1 tsp chili powder
10 ml/2 tsp dried oregano
300 ml/0.5 pt/1.25 cups Beef Stock
400 g/14 oz/1 large can of tomatoes, chopped
225 g/8 oz/1 small can of kidney beans, drained and rinsed
30 ml/2 tbsp tomato puree (paste)

A few drops of Worcestershire sauce

Salt and freshly ground black pepper

Boiled rice, to serve

Method :

Heat the oil and fry (saute) the onions and garlic until soft, then stir in the meat and fry until browned. Stir in the cayenne, chili powder and oregano and cook for 1 minute. Stir in the stock, tomatoes, kidney beans,
tomato puree and Worcestershire sauce, bring to the boil and simmer for 10 minutes. Season to taste. Part cover the pan and simmer for 1 hour, stirring occasionally and adding extra stock if necessary. Serve with rice.
