Tofu Quiche Recipe

Ingredients : Serves 4

175 g/6 oz/1.5 cups wholemeal flour
25 g/1 oz/2 tbsp light brown sugar
25 g/1 oz/2 tbsp butter or margarine
10 ml/2 tsp fresh yeast

30 ml/2 tbsp cold water

1 egg, beaten
A pinch of salt
15 ml/1 tbsp oil
1 onion, chopped
1 garlic clove, chopped
50 g/2 oz mushrooms, chopped
A few drops of soy sauce

225 g/8 oz tofu, mashed
75 g/3 oz/0.75 cup Cheddar cheese, grated
2 eggs, beaten
120 ml/4 fl oz/0.5 cup milk 1 carrot, grated
25 g/1 oz/0.25 cup sesame seeds

Method :

Mix together the flour and sugar and rub in the butter or margarine. Dissolve the yeast in the water and add the egg and salt. Mix into the dry ingredients and knead until the dough is firm. Use to line a 20 cm/8 in flan ring. Heat the oil and fry (saute) the onion, garlic, mushrooms and soy sauce until soft. Stir in the tofu, cheese, eggs and milk and pour them over the vegetables. Sprinkle with the carrot and sesame seeds. Leave to rest for 10 minutes, then bake in a preheated oven at 200°C/400°F/gas mark 6 for 25 minutes.
