       Ingredients : 
            2 heads fresh broccoli 
            
            3 tablespoons vegetable oil 
            
            Salt to taste 
            
            2 tablespoons light soy sauce 
            
            2 tablespoons white Chinese vinegar 
            
            2 tablespoons sesame oil 
            
            1 teaspoon salt for boiling the 
			broccoli 
            
            1 tablespoon white sugar 
		
              
      
      
      Method : 
      
		Cut the fresh broccoli into bite-sized 
		florets. Remove the tough skin off the stem
              and quarter it into 2 inch pieces, cutting them slantwise. Add 2.5 quarts water,
              2 tablespoons oil and 1 tablespoon salt into a pot. Bring to a 
		boil. Add the broccoli and boil
              quickly for about a minute. Quickly plunge them into cold water to 
		set color, drain and place on platter or in a bowl. Using a small bowl, 
		mix the soy sauce, vinegar, sesame oil, salt and sugar. Pour the mixture over the
              broccoli and toss. This salad can be served
              hot or cold depending on your preference.  |
