Preparing and Cooking Field Mushrooms

To prepare field mushrooms, trim the stalk bottoms if necessary and wipe the caps with a damp cloth. Slice according to the recipe. For true field mushrooms, you need do nothing more complicated than simply fry them in butter or live oil with a suggestion of garlic if liked. However, like flat mushrooms, field mushrooms can be used for stuffing, in soups or indeed any mushroom recipe.

They are darker than button mushrooms and will color soups and sauces brown, but the flavor will be extremely good. When stuffing mushrooms, gently fry the caps on both sides for a few minutes. The stalks can be chopped and added to the stuffing or can be used for soups or stocks.
