Fiddlehead Fern

Sometimes called the ostrich fern, these shoots are a rich green color and are normally about 5 cm / 2 in long. They have an unusual flavor, something like a cross between asparagus and okra, and have a slightly chewy texture, which makes them a popular choice for oriental dishes.

Preparing and Cooking

To prepare and cook, trim the ends and then steam or simmer in a little water or saute in butter until tender. Use in salads or serve as a first course with a Hollandaise sauce.
