Ham and Sweetcorn Chowder Recipe

Ingredients : Serves 4

25 g/1 oz/2 tbsp butter or margarine

1 onion, finely chopped
45 ml/3 tbsp plain (all-purpose) flour

75 g/3 oz full-fat soft cheese

300 ml/4 pt/1.25 cups Chicken Stock
150 ml/0.25 pt milk
400 g/14 oz/1 large can of sweetcom (corn), drained
Salt and freshly ground black pepper

150 ml/0.25 pt double (heavy) cream

100 g/4 oz/1 cup cooked ham, finely chopped
Hot crusty bread, to serve

Method :

Melt the butter or margarine in a large saucepan and fry (saute) the onion until soft but not brown. Stir in the flour and cook for 1 minute. Stir in the cheese, then whisk in the stock and milk. Add the sweetcorn, season to taste and simmer for 10 minutes. Stir in the cream and heat through gently, stirring occasionally. Sprinkle with the ham and serve with hot crusty bread.
