Reserve some of the chopped tomato, green pepper and cucumber for the
garnish and place the remainder in a food processor or blender with the
onion. Process until fine. Add the wine vinegar, oil and breadcrumbs and
season to taste. Process again until well blended. Transfer to a dish,
cover and chill. When ready to serve, thin the soup with cold water to the
consistency you like, then float a few ice cubes in the soup and serve
with the reserved garnish.
