Curried Apple Soup Recipe

Ingredients : Serves 4

25 g/1 oz/2 tbsp butter or margarine
1 onion, chopped
25 g/1 oz plain (all-purpose) flour

15 ml/1 tbsp curry powder

900 ml/1.5 pts Chicken Stock

750 g/1.75 lb cooking (tart) apples, peeled, cored and sliced

15 ml/1 tbsp lemon juice
Salt and freshly ground black pepper
90 ml/6 tbsp plain yoghurt

Method :

Melt the butter or margarine in a large saucepan and fry (saute) the onion until soft but not brown. Stir in the flour and curry powder and cook for 1 minute, stirring. Add the stock, apples and lemon juice and bring to the boil, stirring continuously. Season to taste with salt and pepper. Simmer for 10 minutes until the apples are soft, then puree in a food processor or blender. Return to the pan to reheat, then ladle into warm soup bowls, add a swirl of yoghurt to each one and serve.
