Stilton Tarts Recipe

Ingredients : Serves

50 g/2 oz/0.25 cup butter or margarine

25 g/1 oz/2 tbsp lard (shortening) or vegetable fat
175 g/6 oz/1.5 cups plain (all-purpose) flour
75 g/3 oz/0.75 cup Stilton or other blue cheese, crumbled
45 ml/3 tbsp water
1 bunch of spring onions (scallions), chopped
300 ml/0.5 pt/1.25 cups single (light) cream
2 eggs, beaten
Salt and freshly ground black pepper

Method :

Rub the butter or margarine and lard or vegetable fat into the flour until the mixture resembles breadcrumbs. Mix in a third of the cheese and add enough of the water to bind the mixture to a firm pastry (paste). Roll out on a floured surface and use to line four greased 10 cm/4 in flan tins (pie pans). Sprinkle the onions into the flan cases. Beat together the cream and eggs, then season with salt and pepper. Stir in the remaining cheese and pour the mixture into the pastry cases (pie shells). Bake in a preheated oven at 200°C/400°F/gas mark 6 for about 20 minutes until golden brown. Serve hot or warm.
