Shrimp Toasts Recipe

Ingredients : Serves

5 slices of bread
100 g/4 oz cooked, peeled prawns (shrimp)
50 g/2 oz butter or margarine

2.5 ml/0.5 tsp curry paste
A pinch of ground coriander (cilantro)

4 parsley sprigs

Method :

Reserve one slice of bread and flatten the others with a rolling pin. Cut into rounds with a pastry (cookie) cutter and toast lightly. Reserve a few shrimps for garnish and chop the remainder. Break the remaining slice of bread into crumbs. Blend the chopped shrimp with the butter or margarine, then stir in the curry paste, breadcrumbs and coriander. Spread the mixture over the toast rounds and grill (broil) under a hot grill (broiler) for 5 minutes until golden. Garnish with the reserved shrimps and a sprig of parsley.
