Cream Cheese Nectarines Recipe

Ingredients : Serves 4

1/2 Iceberg lettuce, shredded
4 nectarines, halved and stoned (pitted)

225 g/8 oz/1 cup full-fat soft cheese

30 ml/2 tbsp single (light) cream

100 g/4 oz/1 cup chopped mixed nuts

Salt and freshly ground black pepper

50 g/2 oz/1 small jar of lumpfish roe

Method :

Arrange the lettuce on individual plates and place the nectarine halves on top. Beat the cheese with the cream and nuts and season to taste with salt and pepper. Spoon the mixture on the top of the nectarines and garnish with the lumpfish roe.
