Black Olive Pate Recipe

Ingredients : Serves 4

250 g/9 oz stoned (pitted) black olives, coarsely chopped
1 garlic clove, crushed
Finely grated rind and juice of 1 lemon

25 g/1 oz/0.5 cup fresh breadcrumbs

50 g/2 oz full-fat soft cheese

Salt and freshly ground black pepper

1 lemon, cut into wedges, to garnish

Ciabatta bread or crisp toast, to serve

Method :

Blend or mix together the olives, garlic, lemon rind and juice, breadcrumbs and cheese. You can do this by hand or in a blender or processor, but if you use a machine be careful not to make the mixture too smooth. Season to taste with salt and pepper. Chill for several hours before serving with ciabatta bread or crisp toast.
