      225 g/8 oz French (green) beans 
      2 hard-boiled (hard-cooked) eggs, chopped 
      3 spring onions (scallions), finely chopped 
      15 ml/3 tbsp balsamic vinegar 
      
      120 ml/4 fl oz/0.5 cup olive oil 
      Salt and freshly ground black pepper

      Method : 
      
      Bring a large pan of salted water to the boil, add the beans and boil for 
      about 5 minutes until just tender but still crisp. Drain, rinse in cold 
      water, then leave to cool. Transfer to a serving bowl and sprinkle with 
      the eggs and spring onions. Whisk together the vinegar and olive oil until 
      well blended and season with salt and pepper. Pour over the salad and toss 
      well before serving.  |
