(Pork & Cucumber Salad)
Dried shrimp, soaked, cleaned and
pounded until smooth
Shallots, thinly sliced
Sambal Belacan (shrimp paste)
Simmer the pork belly in water for about 20 minutes until it is
Cool, then slice thinly.
Peel the cucumber and quarter it lengthways.
Remove the soft center and slice into bite-sized pieces.
prepare the Dressing, mix all the ingredients thoroughly.
Combine the Dressing with the dried shrimp, pork and cucumber.
Serve with steamed white rice.
