Low fat yoghurt

Chicken stock

Olive oil

Mustard

Sugar

Ground pepper

 

 

Small lettuce heads, coarsely shredded

Cherry tomatoes

Green apples, diced

Canned pineapple cubes, cut into halves

Red onion, sliced

Sliced celery

Carrot, grated

Thinly sliced cooked chicken

Method :
  • Combine the ingredients for the dressing in a bowl.

  • Cover and chill in the refrigerator.

  • Arrange vegetables and chicken on a plate.

  • Cover and chill in the fridge.

  • Before serving, drizzle dressing over the vegetables and chicken.

  • Toss lightly if desired.

  • Serve immediately.
