Tuna Parcels Recipe

Ingredients : Serves 4

225 g/8 oz/2 cups plain (all-purpose) flour
A pinch of salt
50 g/2 oz/0.25 cup butter or margarine

50 g/2 oz/0.25 cup lard (shortening) or vegetable fat
45 ml/3 tbsp water
100 g/4 oz/1 small can of tuna fish, drained
15 ml/1 tbsp tomato puree (paste)

15 ml/1 tbsp Worcestershire sauce

Salt and freshly ground black pepper

Method :

Mix together the flour and salt, then rub in the fats until the mixture resembles fine breadcrumbs. Stir in just enough of the water to make a smooth pastry (paste). Wrap in clingfilm (plastic wrap) and chill for 30 minutes. Thoroughly mix together the remaining ingredients and season to taste with salt and pepper. Roll out the pastry on a lightly floured surface and cut into small squares. Place spoonfuls of the filling mixture on each square, dampen the edges and seal into triangles. Place the triangles on a greased baking (cookie) sheet and bake in a preheated oven at 200C/400F/gas mark 6 for 20 minutes until golden brown.
