Sweet and Sour Fish Kebabs Recipe

Ingredients : Serves 4

60 ml/4 tbsp clear honey

30 ml/2 tbsp lemon juice

15 ml/1 tbsp soy sauce

A pinch of chili powder
750 g/1.75 lb whiting or red mullet fillets
2 onions, sliced
4 courgettes (zucchini), sliced

1 lemon, sliced

Method :

Warm the honey, lemon juice, soy sauce and chili powder in a saucepan. Cut the fish into 4 cm/1.5 in slices, then thread the fish, onions, courgettes and lemon alternately on to four skewers. Lay them in a shallow dish and pour the marinade over. Leave for at least 30 minutes, turning occasionally. Remove the skewers from the marinade and grill (broil) under a medium grill (broiler) for 15 minutes until cooked through and golden, basting with the marinade and turning frequently.
