Skate in Wine and Parsley Recipe

Ingredients : Serves 4

450 g/1 lb skate wings
2 shallots, chopped
1 onion, sliced
Salt and freshly ground black pepper

50 g/2 oz mushrooms, sliced
30 ml/2 tbsp chopped parsley
150 ml/0.25 pt dry white wine
15 g/0.5 oz/1 tbsp butter or margarine

15 ml/1 tbsp plain (all-purpose) flour

50 g/2 oz/1 cup fresh breadcrumbs

Method :

Arrange the skate wings in a greased shallow, flameproof dish, sprinkle with the shallots and onion and season to taste. Mix the mushrooms and half the parsley with the wine and add it to the dish. Cover and bake in a preheated oven at 180C/350F/gas mark 4 for 45 minutes. Transfer the fish to a warm serving dish and keep warm. Mix together the butter or margarine and flour and stir it into the sauce, heating gently, until the sauce thickens. Pour the sauce over the fish and sprinkle with the breadcrumbs. Brown under a hot grill (broiler) and serve sprinkled with the remaining parsley.
