Salmon Croquettes Recipe

Ingredients : Serves 4

400 g/14 oz/1 large can of salmon, drained and finely flaked
300 ml/0.5 pt/1.25 cups All-in-one White Sauce
5 ml/1 tsp Worcestershire sauce
Salt and freshly ground black pepper

1 egg, beaten
100 g/4 oz/2 cups fresh breadcrumbs

Oil, for deep-frying
1 lemon, cut into wedges

Method :

Mix the salmon with just enough of the white sauce to make a thick mixture and season to taste with the Worcestershire sauce, salt and pepper. Shape into croquettes. Heat the oil to 180°C/350°F, when a cube of day-old bread will sink to the bottom, rise and brown in 1 minute. Dip the croquettes in the egg, then the breadcrumbs, then in the egg and breadcrumbs again. Fry (saute) in the hot oil for about 4 minutes until crisp and golden brown. Drain on kitchen paper (paper towels) and serve with the lemon wedges.
