Plaice with Cucumber Sauce Recipe

Ingredients : Serves 4

50 g/2 oz/0.25 cup butter or margarine

30 ml/2 tbsp anchovy paste
750 g/13 lb plaice fillets
1 small cucumber, diced
5 ml/1 tsp chopped dill (dill weed)
275 g/10 oz/1 medium can of condensed mushroom soup
60 ml/4 tbsp plain yoghurt
1 tomato, skinned, seeded and chopped

Salt and freshly ground black pepper

Method :

Melt the butter or margarine in a pan and stir in the anchovy paste. Add the plaice and fry (saute) for about 8 minutes until the fish is golden brown on both sides. Combine the remaining ingredients, seasoning to taste, and spoon over the fish. Cover and cook gently for 5 minutes. Transfer the plaice to a warm serving dish and pour the sauce over.
