Italian-Style Seafood Roast Recipe

Ingredients : Serves 4

450 g/1 lb small new potatoes
2 red onions, cut into wedges
2 courgettes (zucchini), cut into chunks

4 garlic cloves, halved
2 lemons, cut into wedges
3 small rosemary sprigs
60 ml/4 tbsp olive oil
350 g/12 oz uncooked shrimps

225 g/8 oz squid rings
4 tomatoes, quartered

Method :

Place the potatoes, onions, courgettes, garlic, lemon wedges and rosemary in a large roasting tin (pan). Pour over the oil and toss until the vegetables are well coated. Cook in a preheated oven at 200C/400F/gas mark 6 for 30 minutes until the potatoes are tender, stirring occasionally. Stir in the shrimps, squid and tomatoes and roast for 10 minutes until the shrimps are pink and all the ingredients are tender and lightly browned.
