Remove the meat from the shell, discarding the soft gills from the side of
the central body section. Clean the shell well and mix the meat with the
other ingredients, seasoning to taste. Return the mixture to the shell and
bake in a preheated oven at 190°C/ 375°F/gas mark 5 for about 15 minutes.
Alternatively, for a cold dish omit the breadcrumbs and add 15 ml/1 tbsp
oil and a little white pepper to the mixture.
