Creole Shrimps Recipe

Ingredients : Serves 4

45 ml/3 tbsp oil
1 onion, chopped
1 green (bell) pepper, chopped
2 celery sticks, chopped

1 garlic clove, chopped
25 g/1 oz/0.25 cup plain (all-purpose) flour

45 ml/3 tbsp tomato puree (paste)
5 ml/1 tsp lemon juice
2.5 ml/0.5 tsp Worcestershire sauce
A few drops of Tabasco sauce
1 bay leaf
300 ml/0.5 pt/1.25 cups water
Salt and freshly ground black pepper

450 g/1 lb cooked, peeled shrimps
Rice or pasta, to serve

Method :

Heat the oil and fry (saute) the onion, green pepper, celery and garlic until soft but not brown. Stir in the flour and cook for 2 minutes. Add the tomato puree, lemon juice, Worcestershire sauce, Tabasco sauce, bay leaf and water. Season to taste, bring to the boil, then simmer for 3 minutes. Add the shrimpss and stir well. Simmer for about 5 minutes until heated through and well blended. Discard the bay leaf. Serve with rice or pasta.
