Baked Mackerel in Mustard Recipe

Ingredients : Serves 4

4 mackerel or large herrings
15 ml/1 tbsp plain (all-purpose) flour

25 g/1 oz/2 tbsp butter or margarine

10 ml/2 tsp Dijon mustard
30 ml/2 tbsp white wine vinegar

30 ml/2 tbsp water
Salt and freshly ground black pepper

Method :

Clean the fish and lay them side by side in a greased ovenproof dish. Mix together the flour, half the butter or margarine, the mustard, wine vinegar and water and pour over the fish. Season to taste and dot with the remaining butter. Cover and bake in a preheated oven at 190°C/375°F/gas mark 5 for about 30 minutes, basting occasionally.
