Stir-Fried Chicken Recipe

Ingredients : Serves 4

45 ml/3 tbsp oil
350 g/12 oz chicken breast, cut into strips
1 green (bell) pepper, cut into strips

100 g/4 oz carrots, finely sliced

175 g/6 oz white cabbage, finely shredded
225 g/8 oz/1 medium can of pineapple chunks in natural juice
10 ml/2 tsp soy sauce
15 ml/1 tbsp white wine vinegar

Boiled noodles, to serve

Method :

Heat 30 ml/2 tbsp of the oil in a frying pan (skillet) and fry (saute) the chicken until white all over. Remove the chicken from the pan. Add the remaining oil to the pan with the green pepper and carrots and stir-fry for 2 minutes. Add the cabbage and stir-fry for 1 minute. Replace the chicken and stir in the pineapple and juice, soy sauce and wine vinegar. Simmer gently for 3 minutes and serve hot with noodles.
