Spiced Eastern Turkey Recipe

Ingredients : Serves 4

1.2 kg/2.5 lb turkey legs
5 ml/1 tsp ground cumin
5 ml/1 tsp ground coriander (cilantro)

5 ml/1 tsp turmeric
2.5 ml/0.5 tsp ground ginger
300 ml/0.5 pt/1.25 cups plain yoghurt

30 ml/1 tbsp lemon juice
Salt and freshly ground black pepper

45 ml/3 tbsp oil
225 g/8 oz onions, sliced
45 ml/3 tbsp desiccated (shredded) coconut
30 ml/2 tbsp plain (all-purpose) flour

150 m/0.25 pt Chicken Stock
15 ml/1 tbsp chopped parsley

Method :

Cut the meat off the bones and cut it into bite-sized pieces. Stir the spices into the yoghurt and lemon juice and season to taste. Stir in the meat, cover and chill for 3 hours. Heat the oil and fry (saute) the onion until lightly browned. Add the coconut and flour and fry, stirring, for 1 minute. Stir in the turkey, marinade and stock, bring to the boil and pour into a casserole dish (Dutch oven). Cover and bake in a preheated oven at 170°C/325°F/gas mark 3 for 1.25 hours until the turkey is tender. Adjust the seasoning if necessary and sprinkle with the parsley to serve.
