60 ml/4 tbsp olive oil
2 onions, chopped
2 eating (dessert) apples, peeled, cored and chopped
2 celery sticks, chopped
90 ml/6 tbsp white wine vinegar
25 g/1 oz/2 tbsp demerara sugar
15 ml/1 tbsp orange juice
Salt and freshly ground black pepper
1 bouquet garni sachet
Heat the oil and fry (saute) the partridges until browned on all sides.
Remove from the pan. Fry the onions, apples and celery until just
beginning to brown, then stir in the wine vinegar, sugar and orange juice
and season to taste. Transfer the mixture to a casserole dish (Dutch oven)
and top with the partridges. Add the bouquet garni, cover tightly and bake
in a preheated oven at 150°C/300°F/ gas mark 2 for 3 hours until tender.
Discard the bouquet garni before serving.
