Grouse in Milk Recipe

Ingredients : Serves 2

25 g/1 oz/2 tbsp lard (shortening) or vegetable fat
1 grouse
2 bacon rashers (slices), rinded and chopped
50 g/2 oz belly pork, diced

100 g/4 oz mushrooms sliced

150 ml/0.25 pt milk

75 ml/5 tbsp water

2.5 ml/0.5 tsp ground mace

1 bouquet garni sachet
Salt and freshly ground black pepper

Method :

Heat the lard or vegetable fat in a frying pan (skillet). Stuff the grouse with the bacon and brown it in the fat, then transfer it to a casserole dish (Dutch oven). Fry (saute) the pork until browned. Add the mushrooms and fry for 1 minute, then spoon over the grouse. Bring the milk and water to the boil, stir in the mace and pour into the casserole. Add the bouquet garni and season to taste. Cook in a preheated oven at 150°C/300°F/gas mark 2 for 4 hours until tender. Discard the bouquet gami before serving.
