Devilled Turkey Drummers Recipe

Ingredients : Serves 4

4 turkey drumsticks
1 garlic clove, sliced lengthways

15 ml/1 tbsp oil
8 streaky bacon rashers (slices), rinded

100 g/4 oz apricot jam (jelly)

250 ml/8 fl oz/1 cup tomato ketchup (catsup)
60 ml/4 tbsp soy sauce
45 ml/3 tbsp French mustard
60 ml/4 tbsp Worcestershire sauce

60 ml/4 tbsp lemon juice
Salt and freshly ground black pepper

Method :

Stick a garlic sliver in the thick end of each drumstick and brush with the oil. Roll up the bacon rashers. Melt the jam with the ketchup in a heavy saucepan. Stir in the soy sauce, mustard, Worcestershire sauce and lemon juice and season to taste. Bring to the boil and cook for 1 minute. Place the drumsticks in an ovenproof dish and cover with the sauce. Cover and bake in a preheated oven at 180C/350F/gas mark 4 for 2 hours until the drumsticks are well cooked through, basting occasionally with the sauce. Remove the lid and add the bacon rolls for the last 20 minutes cooking.
