100 g/4 oz/1 cup cashew nuts or peanuts, chopped
Freshly ground black pepper
5 ml/1 tsp ground coriander (cilantro)
8 chicken drumsticks
1 egg, beaten
Mix together the breadcrumbs, nuts, pepper and coriander. Dip the chicken
drumsticks in the egg, then in the breadcrumb mixture and bake in a
preheated oven at 190°C/375°F/gas mark 5 for 30 minutes. Serve.
