Braised Lemon Chicken Recipe

Ingredients : Serves 4

1 celery stick, chopped
1 onion, chopped
1 cooking (tart) apple, peeled, cored and sliced
50 g/2 oz/0.25 cup butter or margarine, softened
5 ml/1 tsp French mustard
5 ml/1 tsp dried mixed herbs
Grated rind and juice of lemon

Salt and freshly ground black pepper

4 chicken portions
300 ml/0.5 pt/1.25 cups Chicken Stock

Method :

Place the celery, onion and apple in the bottom of an ovenproof dish. Mix the butter or margarine with the mustard, herbs, lemon rind and juice and season to taste. Make two slits across the top of each chicken portion and spread liberally with the lemon butter. Place the portions on top of the vegetables, add the stock and cover. Bake in a preheated oven at 200°C/400°F/gas mark 6 for 35 minutes, then remove the lid and return the dish to the oven for a further 10 minutes to brown. Serve.
