Soak 8
wooden skewers in the water as you are preparing the rest of the
ingredients.
Put the
pork, ginger, garlic, fish sauce, sherry, slat and pepper in a
bowl and marinate for 30 minutes.
Drain
the pork but
reserve the marinade.
Dry the
skewers and thread t he meat onto them.
Brush a
heavy-based pan with the oil and heat it until extremely hot.
Cook the
skewers of pork for about 4 minutes. Ensure to turn the skewers
regularly until the pork becomes dark golden brown and sprinkle
over a little of the marinade.
Do not
overcook the pork or it will become very dry.
Garnish
with the mint and serve with steamed rice
