Pork and Lotus Root Soup Recipe

Ingredients : Serves 4 |
|
500g
Lean pork ribs
500g Fresh lotus root
3 Spring onions
1/2 teaspoon Salt
6 cups Water
1-2 tablespoons Fish sauce |
Method :

Ask the
butcher to cut the pork ribs into short lengths.

Peel lotus
root thinly and cut into slices.

Slice spring
onions, using both green and white parts.

Put these
ingredients into a saucepan with the salt and water.

Bring to the
boil.

Then cover
and simmer for 1 1/2 hours or until well cooked and the liquid reduced
to 4 cups.

Add fish
sauce to taste.

Serve with
white rice.
