Pork and Lotus Root Soup Recipe

Ingredients :

500 g Lean pork ribs

500 g Fresh lotus root

3 Scallions

1/2 teaspoon Salt

6 cups Water

1-2 tablespoons Fish sauce

 

Method :

When buying the pork ribs, request the butcher to cut them into short lengths. Peel the lotus root thinly and cut into slices. Slice the scallions, using both the white and green parts. Put these ingredients into a saucepan with the salt and water. Bring to the boil. Then cover and simmer for 1 1/2 hours or until well cooked and the liquid reduced to 4 cups. Add fish sauce to taste. Serve hot with white rice.
