       Ingredients : 
      500 g
      Chicken wings 
      1 kg Chinese winter melon 
      6 Scallions 
      5 cups Water 
      1 tablespoon Fish sauce 
      Black pepper to taste 
      Salt to taste 
        
      
      Method : 
		Cut the chicken wings into joints. Peel 
		and discard the skin and seeds of the melon. Cut melon into bite-size 
		pieces. Slice scallions. Put the chicken with the scallion, water and 
		salt into a saucepan before bringing to the boil. Cover and simmer for 1 
		hour or until the liquid is reduced and well flavored. Add winter
        melon, bring to the boil for one minute only. Add fish
        sauce and pepper to taste. Serve
        immediately, with rice if desired.
