Method :

Cut chicken
wings or half chicken into joints.

Peel melon,
discard skin and spongy center with seeds.

Cut melon
into bite-sized pieces.

Slice spring
onions.

Put chicken
into saucepan with spring onions, water and salt.

Bring to the
boil, then cover and simmer for 1 hour or until liquid is reduced and
well flavored.

Add winter
melon, bring to the boil for one minute only.

Add fish
sauce and pepper to taste.

Serve
immediately, with rice if desired.
Note :
Peeled, sliced and seeded cucumber can be used as a substitute for
winter melon if it is not available. |
